Rigatoni with Beef & Sausage Ragù

I don’t know about where you guys are, but there was a hint of fall in the air here this weekend. We turned off the air-conditioning and opened up all the windows, and I even had to don a long-sleeved shirt at the local fireman’s carnival on Friday night.

Needless to say, I was feeling something in the way of comfort food. And what better fits that bill than a big bowl of baked cheesy pasta? My girlfriend made this dish for me after we brought home our first son Andrew, over 5 years ago now. She drove all the way from Annapolis to come and make us this pasta, and share dinner with us. It quickly became a favorite in our home, and consequently my “go-to” baked pasta dish.

Ground beef and spicy Italian sausage is simmered in a rich tomato sauce, releasing all their meaty flavor into the sauce. Then at the end, a bit of heavy cream is stirred in…making it lighter in flavor, but yet richer at the same time. Layered with a bit of mozzarella cheese before baking, it’s becomes bubbly and crusty in the oven – everything that a baked pasta should be. Paired with a glass of red, a fresh green salad, and some crusty bread – it’s the perfect Sunday meal to gather your family around the table. We intend to enjoy every last day of summertime, but I’m definitely looking forward to that chill in the air being here to stay!

Carolina-Style Barbecue Sauce
It’s officially summertime here on the Eastern Shore, and our grill is almost always fired up. We do a lot of the classic stuff – steaks, burgers, dogs, chicken. But once in a while, I like to go all out and smoke a pork butt on the grill for hours on end. I don’t have a fancy smoker or anything, I just throw some soaked wood chips onto the grates of my gas grill. The smoke infuses the pork with delicious flavor, and it ends up falling off the bone and melting in your mouth. And for barbecue of that caliber, you need some awesome sauce to go along with it.

My strawberry-chipotle barbecue sauce is a favorite, takes less than 2 minutes (literally) to bring together and is absolutely delicious. But, I wanted something different. I’d never made a vinegar based sauce before. The weekend before we’d gone to our local homebrew shop, and stopped at a notorious local barbecue joint on the way for lunch. I’d debated the red sauce or the vinegar sauce…went for the red, then was craving Carolina style ‘cue all week long. So, that’s what I went with…

It turned out absolutely delicious. The sweet mustardy tang paired with the smoky saltiness of the pork was out of this world good. All the flavors mingled and married so well. I can’t wait to try it on grilled chicken or pork chops next!

Chicken Chesapeake

It’s getting to be the time of year where I have to get creative with crab. I’m hoping Jon and my dad will have an opportunity to run the trotline for the first time this weekend. I think Andrew will be old enough to go this year, everyone’s excited about that!

I’ve seen this dish on many restaurant menus in our area. Usually a chicken breast stuffed with crab dip or crab imperial, then baked. But you guys know me – I couldn’t leave it at that. So I added bacon and cheddar cheese, as well as using some seafood seasoning to add some flavor to the chicken breasts.

Since the chicken is stuffed, you don’t need a ton of crab meat. A small amount goes a long way in this dish. I know not everyone is as fortunate as me, crab locale wise…trying to look out for you guys! But, if you happened to have some leftover crab dip or crab imperial, you could certainly substitute that in place of the crab filling listed in the recipe.

It was delicious, relatively easy and quick to throw together, and impressive…always a winning combination in my book. Looking forward to summertime here on the Chesapeake Bay!

Bourbon & Brown Sugar Ribs

Ribs. Is there anything more appropriate for a Memorial Day BBQ? There are many schools of thought as far as rib preparation goes. Grilling vs baking. Dry Rub vs Sauce. I like to go all out, and do all of those things! A dry rub for a few hours, then baking in the oven til perfectly tender and ALMOST falling apart. Then a quick grill with a delicious basting BBQ sauce.

The sauce itself is magical. The folks at Musselman’s sent me a big jar of their apple butter to try out – and I used it as the base for the sauce. To be honest, I think the apple butter itself brushed on meats on the grill would be wonderful – it’s the perfect texture and consistency. But, I went ahead and added some other delicious things to it – like bourbon and brown sugar – and it knocked it out of the park!
