In my noobular years, I disliked avocado.  I know, I know. Shame on me! Thank Heavens I came around. Like most people, it was guacamole that brought me around. Rich, creamy, and cool – it’s pretty much the perfect condiment. Lots of people have their own spin on guacamole, and mine is no exception. It’s similar to most guac recipes, but, I like to add a little bit of sour cream. It gives it a nice tangyness, and lightens it up a bit. I’m sure you could also use Greek yogurt, and get the same effect. We put it on everything; enchiladas, tacos, even scrambled eggs. Which, incidentally, I also add a bit of sour cream to. That’s a tip I picked up from Ralph Cifaretto in “The Sopranos”, right before he got whacked (one of my favorite episodes, btw, for all you Sopranos fans out there). Ahh, I miss that show!

I digress. The guacamole. With all the football game goodness we have to look forward to in the coming weeks (Go 9ers!), save room on your table for a big bowl of guacamole and tortilla chips. It’s always one of the first things to go! I’ve also got another great munchie coming up tomorrow that’s perfect for football snacking. Stay tuned!

I never thought I’d say that a meat-stuffed cabbage would be my new favorite dish, but it is true. I guess that’s what living in a house with three guys will do to you! I’d tried a recipe for stuffed cabbage a while back, and I didn’t like it. It used bratwurst, which I’m not the biggest fan of in the first place. Plus, I think the dish and I had just gotten off on the wrong foot to begin with. Cabbage rolls were always something I saw other families eating, and were kind of grossed out by. Meat and cabbage, okay. But, to slather it in tomato sauce? Weird.

I came across this recipe on Pinterest, and I couldn’t wait to try it. I had originally written in Swedish meatballs into our menu for the week, but decided to swap it out for the cabbage rolls where the main ingredients (ground pork and beef) were the same. Completely and totally blew everyone away! They are braised in red wine, and that really does something for the cabbage. Cabbage can be such a harsh flavor, but the wine balances it right out. And, the cabbage mellows the wine out. It’s a win-win! The rice combined with the ground meats really lightens up the texture of the filling, too. Often meat fillings can be so dense and rubbery – this was just right. Also, I’m pleased to report that the tomato sauce fits right in perfectly. You really can’t go wrong when the base for the sauce is the delicious beefy, wine-y braising liquid. If you’re looking for a last minute Christmas Eve supper, look no further. With a little bit of prep work leafing the head of cabbage (that I actually found quite fun!), this is a dinner that takes care of itself on the stove top – so you can spend more time doing the fun stuff. Plus, the scent of it bubbling away is intoxicating…

I’ve had these potatoes bookmarked to try for-ever. A new way to prepare potatoes is always welcome in my repertoire! I kept on putting it off, because surely they had to be a pain to make – right? Wrong. It took only a few minutes to get them prepped and into the oven. So glad I finally got around to trying them! They were delicious. Nice and crispy on the outside, moist and tender on the inside.

I’m looking forward to switching up the flavor combinations. I think they’d be wonderful with a cajun spice mix, or a bunch of fresh chopped dill in the olive oil. Or even plain, then topped with the classic sour cream and chopped scallions. Yum! These will definitely be gracing our table every now and again, as everyone loved them, and they really are a little more special than your standard roasted potato. Perfect for Christmas dinner t0 go with that gorgeous “roast beast”!

I’m embarrassed to admit it, but in the past I’d always bought my pizza sauce in a jar. I had tried a couple of times to make a version at home, but it always tended to turn out a bit watery. A couple of weeks ago, the good people at Red Pack offered to send me an assortment of their products. While I love fresh tomatoes with all of my heart, a cook always needs a stash of good quality canned tomatoes in their pantry. I’ve long been a fan of Red Pack products, ever since Cook’s Illustrated named their canned whole tomatoes #1 in it’s category.  Needless to say, I was much obliged!

The first thing I made when my package arrived was this pizza sauce. It is definitely a winner! It only takes 5 minutes, and the flavor is unparalleled. I used a can of pureed tomatoes, which I think is the key. Before I had used diced tomatoes, and pureed them myself…which, is what I think what led to the water-logged sauce. Less water content from the “get go” is a good thing. I add a bit of chili pepper flakes to my sauce, as we like a little kick of heat. This makes enough for 2-3 large pizzas, depending on how saucy you like your pies. It’s also a great simple tomato sauce for something like meatballs.
