Hard Cider Mac & Cheese

I wish I had known about cooking with hard cider sooner. I got my first dose of it’s culinary awesomeness at Thanksgiving 2011, when I added it to my pan gravy. We have about a case of of our local, homebrew cider left from that same year – that I’ve kind of been hoarding. But, when I saw this recipe I couldn’t resist going down to the basement to pull a bottle out.

I’d made a beer macaroni & cheese before, and I’d deemed it my favorite. But this version definitely gives it a run for it’s money. The hard cider lends a wonderful flavor, without being overpowering. And the addition of finely chopped Granny Smith apples and onions? Brilliant.

Spring is on the horizon, and I’m looking forward to it – but I’m trying to get my fill of winter warming favorites while I still can. And, nothing tops a big bowl of creamy, cheesy pasta. Especially when you bring booze to the party too!

Garlic Rice Pilaf

This is one of those side dishes that have been a staple in our kitchen for a while now, but I’d never gotten around to sharing with you guys. Rice is so wonderful and versatile – accepts so many flavors into it’s little white grains.

This rice pilaf takes a little bit more time to put on the table than your standard white rice, due to the fact that it bakes in the oven. But, it’s not hands on – giving you time to finish up dinner while the rice is cooking. The burst of flavor from the garlic is unparalleled though, and well worth the extra time in the oven.

If I have leftovers, I’ll mix in some chopped up veggies and any make myself a make-shift fried rice for lunch the next day. If you’re feeding a larger crowd, the recipe can easily be doubled without having to increase the cooking time.

Perfect Pizza Dough

Who doesn’t love pizza? I know we do. Once a week in our house, usually Friday nights, is pizza night. I make the dough in the afternoon while the boys are napping, enjoy a cup of tea while the dough rises (or maybe try to catch a little catnap myself!), and then I let the boys help to top the pizza before we put it in the oven.

Turning out a pizza as good (if not better) than your local pizza joint’s requires a few things: #1 – a hot oven. #2 – a pizza stone. And, #3 – practice. When I first started making pizzas at home, I had a really hard time rolling out the dough. They’d tasted great, but were severely mishapen. I think that was my problem; I was rolling, not stretching with my hands and letting the dough do all the work.

After a couple of attempts I was producing perfectly round pizza doughs, and all was right with the world. It’s a rarity for us to order a pizza out anymore; partly because there aren’t any decent pizzerias in our small town, and also because they’re just so dag-gone fun to make at home!

If you haven’t found the perfect pizza dough recipe yet, look no further. Using bread flour is the key to a crispy, chewey crust. And, it’s a dream to work with! I’m don’t know that there is a more comforting meal in the world than tomato soup and grilled cheese sandwiches. It’s quick and easy, filling, and cheap. I’ve never cared for tomato soup from a can, it’s always so thin and flavorless. So, when I saw Ina’s version in on the cover of a recent Food Network magazine, I couldn’t wait to give it a try. I loved the idea of grilled cheese croutons!

The soup was delicious and filling. I loved the addition of orzo and a little bit of cream. And the saffron, wow – it adds such a depth of flavor. It takes only a few minutes to throw together – in under 30 minutes you have a homemade meal on the table that isn’t condensed crap-ola.

I didn’t have a great selection of cheeses handy when I made these. So, I just kept in old school and used yellow american for the grilled cheese sandwiches, then cut them into cubes for the croutons. Couldn’t be easier, but how good does it look sitting on top of that delicious soup? I have a feeling this is going to be a new staple in our house!
